Ingredients of Tallow bread:

For tallow:

  • ½ Kg of tallow (beef, goat, lamb)
  • Dried tomato
  • Dried chili pepper 
  • Tablespoon of paste tomato
  • Teaspoon of salt
  • Teaspoon of paprika
  • Teaspoon of cumin
  •  ½ teaspoon of black pepper
  • Tablespoon of harissa
  • 10 cloves of garlic
  • Parsley and cilantro

For the dough:

  • 1 kg of semolina
  • 1 teaspoon of salt
  • Water

Instructions for Tallow bread:

Firstly: Preparation of the tallow

  • Bring the mortar.
  • Place tallow on the mortar.
  • Mash the tallow while adding cloves of garlic and spices simultaneously.
  • Take a pot.
  • Add dried tomato and dried pepper to the pot.
  • Pour a cup of water into the pot.
  • Let the mixture simmer on high heat until it becomes mushy.
  • Transfer the mushy mixture to the tallow texture.
  • Mix everything together until a dough-like consistency of tallow is achieved.

Secondly: Preparation dough’s tallow bread

  • Take a bowl.
  • Combine semolina, salt, and cold water in the bowl. So, The amount of water depends on the type of semolina.
  • Stir the mixture until well mixed.
  • Bake the dough until it reaches a soft and mushy consistency.
  • Divide the dough into small balls.
  • Coat the balls with cooking oil.
  • Allow the balls to rest for one hour.

Thirdly: Cooking tallow’s bread

  • Prepare a smooth tabletop.
  • Take a small ball of dough and place it on the table.
  • Use a rolling pin to flatten the dough until it becomes large in size.
  • Spread the dough of tallow onto the flattened dough.
  • Fold one part of the dough over the other and press them together.
  • Drizzle a small amount of cooking oil onto the dough.
  • Carefully continue rolling the dough, either with a rolling pin or by hand, ensuring that the tallow filling is not visible.
  • Aim for a thin, since to uniform dough.
  • Heat a tajin on the stove.
  • Take a small amount of tallow and melt it in the tajin, allowing pleasant fumes to develop.
  • Cook the bread in the tajin.
  • Finally, cut the bread into individual portions and enjoy it while it's hot and delicious.
